These Spuds Aren’t Duds

Jacket Potatoes

This is not a recipe in any sense. I suppose I just wanted share that sometimes dinner can be easy AND enjoyable/fun. When Tom or I have a work event at night, we’ll usually do something pretty simple for dinner.  One of our favorites is jacket potatoes – they are delicious and easy to throw in the conventional oven, toaster oven, or even the air fryer.

I’ve even done a potato bar for a party – roasted the potatoes, then cut them in half and spread out a bunch of the toppings below. It was a hit!

Just rub olive oil onto the whole potatoes (you can really use any potatoes here, but I especially like the Russet potato for baking) once you’ve scrubbed and washed them.  I then sprinkle each potato with a good amount of Kosher salt. Poke a few holes in them with a fork. I’ll usually wrap them in foil as well, but sometimes I prefer them a bit crispier, so leave the foil off. Bake on 350 degrees for approximately an hour on a baking sheet.  Follow directions for using a air fryer, as they are all so different.

Once the potatoes have baked, we usually put out all the toppings so anyone who is eating can help themselves and customize the potato to their liking.  Some ideas for toppings:

Thick bacon, crumbled

Sour Cream

Butter

Scallions/green onions, chopped

Baked beans

Shredded cheddar cheese

Cheese sauce

Broccoli florets, cut and steamed

Goat cheese, crumbled

Chili

Avocado

Sausages

Asparagus, steamed or roasted

A few specialty potatoes:

Butter, baked beans, and bacon or ham, topped with cheddar cheese (UK version)

Marinara sauce with pepperoni and then add mozzarella cheese on top (Italian version -big hit with kiddos)

Taco meat, onions, and jalapeno cheddar (Mexican version)

The list is really endless – what veggies do you have? Throw those on! What leftover meat do you have?  Try it on top of a potato! As long as you have butter/oil, and salt and pepper, they are tasty!
