Our Favorite Sheet Pan Dinner –

Sausage, White Bean and Artichoke Hearts Sheet Pan Meal (originally saw this on themomedit.com, in a post from Emily Stoffel.)

This meal is such a staple for us. First of all, it’s all made on one pan (you know how I feel about dishes.) You can marinate it, or if stressed for time, don’t. I usually have most of the items required on hand. It’s delicious, but just unusual enough that we don’t get sick of it.  You can vary up the sausages, use different beans, use whatever herbs you have on hand…you get it. It’s FORGIVING. It cooks in 20 minutes!  It’s gluten free, can be made for vegetarians and vegans….I mean, what’s not to like?? Here’s how I make it:

Ingredients:

1 1/4 to 1 1/2 lbs fresh Italian sausages – I usually mix them up, do some hot Italian, some chicken, some pork, some veggie, so everyone can pick their favorite

2 cans butter beans or cannellini beans, drained

1 large red onion, thinly sliced into wedges

1 jar marinated artichoke hearts (approximately 12-15 oz.) *with their liquid*

1 1/2 tsp salt

1 tsp black pepper

2 sprigs fresh rosemary, removed from stem and roughly chopped

small handful each fresh dill + parsley, roughly chopped, for serving

Instructions:
    1. Combine sausages, onions, beans, artichoke hearts with their liquid, rosemary, salt and pepper in a large zip top bag or baking dish. Toss to combine. Marinate several hours or up to overnight. (As I mentioned in the video, you could freeze at this point — then just thaw and proceed.)
    2. Preheat oven to 450F. Arrange sausages, beans and veggies in single layer on rimmed baking sheet. Prick holes in sausages with a fork. Bake 15-20 mins.
    3. Turn oven to broil and broil additional 2 mins or until sausages are browned and beans are crisp in places.
    4. Divide sausages, beans and veggies among bowls. Top generously with fresh herbs – I used Parsley and Dill tonight and loved that combo with the Rosemary. I have also used Basil in the past with good result.

Additional thoughts:

The portion for this meal is easily scaled — we generally buy five to six  sausages for two adults and two teens, which amounts to about 1 1/2 lbs., for the four of us (this recipe typically feeds us for one meal, maybe one serving leftover) — but if you’re feeding a bigger family, just put a few more sausages onto the pan. If you’re really looking to feed a crowd, you can always double the recipe across a second sheet pan, too.

Vegan/Vegetarian Modification: Swap the sausage for your favorite veggie sausage.

Side Dish suggestion: We often do a butter lettuce salad alongside, and fresh bread/baguettes with butter
