We eat a lot of chicken here – so it’s easy to get into a rut. Once our kids revolted against eating chicken for a period of time because we had it so often! So we’re always trying to find new ways to prepare it to keep it interesting. This one is the old fashioned way, with an elegant spin. Tina breads and fries chicken breast, and tops it with Arugula salad and shaved parmesan, making it feel unique. If we cut it into strips we could sell it to the kids as chicken tenders (and who doesn’t love those?) Tom recommends a dry Provencal Rosé that takes the fry up a notch. A meal that doesn’t take too long and is a crowd pleaser – what more can you ask for?
