Pinot for a Pan

@savoirpair Pinot lovers this one is for you! Complexity and depth on this wine matches perfectly with the sheetpan dinner. #highbrowlowbrow ♬ Upbeat instrumental piece with cutting guitar(1473693) - all_about_eve

One of the best wine experiences we’ve ever enjoyed was a food/wine pairing at Paul Hobbs in Sonoma County. The table was lined with 8 glasses, and we tasted different varietals and vintages, each of which was paired with a dish that would best highlight the wine and vice versa. It was a Savoir Pair dream! One of the wines that we absolutely adored that day (and there were several) was a Pinot Noir for the Hyde Vineyard in nearby Carneros. It sits adjacent to the San Francisco bay, so it gets lovely breezes and cool weather that makes for excellent Pinot. This 2017 Paul Hobbs is nothing short of spectacular! Cherries, and other red fruit, along with some baking spices make this one pair well with the vinegary, earthy and vegetal aspects of the Sheet Pan dinner. Without enough fruit, a wine might come across as flat or dull against these flavors, so having that, along with the sweet/savory baking spices makes a little party in your mouth. Paul Hobbs wines are not cheap – they have an exceptional reputation and are priced accordingly. If you want to have a splurge, I strongly recommend this wine. It’s often limited to allocation customers, but can occasionally be found in some wine shops. It’s an extremely versatile wine, and can be paired with chicken, red meat dishes and pastas, or enjoyed on its own.
