Best ever Sloppy Joes! Recipe: Ingredients • 1 1/4 pound ground turkey • 1 onion , diced • 1 green or red bell pepper , diced • 3 garlic cloves , minced • ¾ cup Chili sauce • 1 tablespoon regular soy sauce • 1 tablespoon Worcestershire sauce • 1 tablespoon brown sugar • 1 teaspoon dijon mustard • ½ cup water • 1 tablespoon olive oil • Kosher salt & ground black pepper to taste • Optional: 2 - 3 drops liquid smoke • Cayenne pepper to taste • Serve With: 4 - 8 Ciabatta buns toasted Prepare Pressure Cooker: Heat up your pressure cooker over medium high heat (Instant Pot: press Sauté button and Adjust button once to Sauté More function). Ensure your pot is as hot as it can be (Instant Pot: wait until indicator says HOT). Brown Ground turkey: Season ground turkey generously with kosher salt and freshly ground black pepper. Add 1 tbsp (15ml) olive oil in pressure cooker. Ensure to coat oil over whole bottom of the pot. Add ground turkey in pressure cooker. The ground turkey will begin to release moisture. At the 5-minute mark, drain & discard the ground turkey juice. Allow ground turkey to brown. Stir occasionally until they are slightly crisped and browned (~5 – 7 minutes). Saute Vegetables: Add diced onion to browned turkey and saute for 2 minutes. Add in diced bell pepper and minced garlic, then saute until fragrant (roughly a minute). Deglaze: Add 1 tbsp (12.5g) brown sugar, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) Worcestershire sauce, and ½ cup (125ml) water, then fully deglaze bottom of the pot by scrubbing all the flavorful brown bits with a wooden spoon. Mix the brown bits with the liquid mixture. Pressure Cook Sloppy Joes: Layer 1 tsp (5ml) dijon mustard, and ¾ cup (188ml) ketchup on top. Do not mix. Close lid and pressure cook at High Pressure for 5 minutes + 10 minutes Natural Release. After 10 minutes, turn venting knob to venting position to release remaining pressure. Open the lid carefully. Reduce and Season: If the Sloppy Joe meat sauce is too runny, give it a quick stir and cook for another few minutes over medium heat (Instant Pot: Press Sauté button). Now is a good time to add in the optional liquid smoke and cayenne pepper if desired. Taste and season with more kosher salt and black pepper if necessary. Instant Pot Sloppy Joes

I love this recipe because it’s kind of a throwback, but also a crowd pleaser.  Using the Instant Pot makes them quick too, and the pressure cooker (really what an Instant Pot is) infuses them with great flavor.  I’ve made a double batch and transferred it to a slow cooker to keep warm, and then made a double batch again in my Instant Pot for a party (the two double batches served approximately 20.)  It worked so well, and was a popular lunch for a crowd. The original recipe calls for ground beef, but I routinely replace it with ground turkey in an effort to cut down on our beef consumption, and make them slightly more heathful. These are deliciously sweet and savory:

Ingredients:

1.25 pounds lean (7% fat) ground turkey

1 onion, diced

1 red bell pepper, diced

3 garlic cloves, minced

12 oz chili sauce

1 tablespoon regular or reduced sodium soy sauce

1 tablespoon Worcestershire sauce

1 heaping tablespoon brown sugar

1 tablespoon Apple Cider vinegar

1 teaspoon Dijon mustard

1/4 to 1/2 cup water 

1 tablespoon olive oil

Kosher salt & ground black pepper to taste

Optional:

         2 – 3 drops Liquid Smoke

         ¼ tsp Cayenne pepper, or to taste

 

Prepare Pressure Cooker: Heat up your pressure cooker over medium high heat (Instant Pot: press Sauté button and Adjust button once to Sauté More function). Ensure your pot is as hot as it can be (Instant Pot: wait until indicator says HOT).

Deglaze: Add 1 tbsp brown sugar, 1 tbsp Apple Cider vinegar, 1 tbsp soy sauce, 1 tbsp Worcestershire sauce, and water to fully deglaze bottom of the pot by scrubbing all the flavorful brown bits with a wooden spoon. Mix the brown bits with the liquid mixture.

Layer chili 12 oz. chili sauce, 1 tsp Dijon mustard, and liquid smoke on top. Do not mix. Close lid and pressure cook at High Pressure for 5 minutes + 10 minutes Natural Release. After 10 minutes, turn venting knob to venting position to release remaining pressure. Open the lid carefully and stir. Keep warm until ready to serve.

Toast Burger Buns: On a skillet, toast burger buns for a few minutes over medium heat with or without butter

Reduce and Season: If the Sloppy Joe meat sauce is too runny, give it a quick stir and cook for another 10 or so minutes over medium heat (Instant Pot: Press Sauté button.) Taste and season with more kosher salt and black pepper if necessary. Add ¼ tsp. cayenne pepper, or to taste.

Serve: Construct the Sloppy Joes with toasted burger buns.
