Chinese Chicken Salad
We love a good Chinese Chicken Salad…we had two restaurants in Los Angeles we based our family’s favorite version on since we loved theirs so much – Stanley’s and Feast From the East – the latter has since gone on to release several grocery items we incorporate into ours because they are so easy to pick up. I will link those here from Amazon, but Gelson’s and Bristol Farms also has them.
Ingredients:
1-2 heads Romain and/or iceberg lettuce, washed and chopped, or a mixture of the two
2-3 chicken breasts, roasted and shredded (I like to use the breast on the bone with skin attached and then de-bone once roasted)**
4 scallions, chopped
2 carrots, shredded
1 red or orange bell pepper, cut into strips
1 -2 cans mandarin oranges, drained
1/2 cup slivered or sliced almonds, toasted
4 oz. fried wonton strips – can be homemade, can be purchased at Wolfgang Puck To Go at Gelson’s Market, or can use Feast from the East prepackaged restaurant style wide strips
Feast from the East Sesame dressing to taste.
Directions:
Add everything to a large bowl and toss to incorporate.
I usually serve with delicious crusty Sourdough bread and butter, just like Stanley’s does 🙂
**when pressed for time, no shame in using a grocery store or Costco rotisserie chicken, instead of roasting your own, or leave the chicken out if making a vegetarian or vegan version of the salad
